Shepherds Pie

Adapted from a recipe listed in the forums of thekindlife.com
1/2 C dried green lentils
3 med. sweet potatoes
1/4 C non-dairy milk
1 T Earth Balance
1/2 tsp sea salt
1 med. onion, chopped
3 small carrots, chopped
1/4-1/2 C kale, chopped
1 stalk celery, chopped
1 large tomato, chopped
1/2 tsp dried basil (Used mix of basil, oregano, garlic & sun-d tomato pwdr)
1 T Bragg’s or Shoyu

Simmer lentils for 45 min. & mash. Set aside
Boil chopped potatoes until easily pierced with fork
Mash potatoes with the milk, Earth Balance, and sea salt, set aside
Saute vegetables in oil, once carrots tender, add lentils, basil, and Bragg’s.
Stir & simmer until liquid cooks off.
Pour vegetable mixture into a lightly oiled pie tin
Layer mashed potatoes over the top
Bake 15-20 minutes

      Glad you liked it! I made lentil taco filling tonight for our work Cinco de Mayo tomorrow. I love lentils more and more as well. They are very balancing and calming to me, too, I have noticed. Good comfort food that is healthy! I’m making Red Lentil Soup Friday!!
