I made this up. It was a hit for sure.
1 T coconut oil
1/2 med sweet onion, chopped
1/2 med green pepper, chopped
1 T oregano
1 T fajita spice blend
1 28 ounce can fire-roasted diced tomatoes
1 cup water
1 15 ounce can garbanzo beans, drained
1 cup quinoa
Heat coconut oil in large saucepan over med-high heat. Add onions and green pepper and cook until soft. Add spices and stir to combine. Add canned tomatoes and water, stir to combine then add quinoa stir to combine, turn heat to a simmer and cover. Simmer, stirring occasionally, until quinoa is cooked, about 10 min. Stir in garbanzo beans and heat through, then serve.
