Kohlrabi-Jicama Salad

Kohlrabi make me think of spaceships.


Something about how they look. My husband loves them steamed and smothered in butter. I needed to be raw so I wanted to make a salad with them.

Hubby didn’t like, but I did.  I made this one up.  The spiciness of the Tabasco an saltiness of the Bragg’s offsets the sweetness of the veggies.

1.5 med kohlrabi, julienne
.75 med red pepper, julienne
.25 med sweet onion, sliced thin
.5 med jicama, julienne
.25 c olive oil
juice of 3 lemons
grated lemon zest from .5 lemon
Celtic sea salt
3 dashes Tabasco
.5 tsp dill
a couple sprays of Bragg’s Liquid Amino Acid
3 drops Stevia

This made about 4 servings.

Using a mandolin thinly julienne all veggies.

Peeled Kholrabi

Stacks of Jicama post-mandolin, then I slice thin with a chef's knife

Mix dressing ingredients together and pour over veggies. Toss to combine.
