Veggie Chili (Whole Foods Style)

Spicy Vegetarian Chili

Adapted from Whole Foods

I made this for Super Bowl Sunday to help me stay on plan.  It is spicy, super-yummy, and very filling.  It is full of good for you veggies and tastes smoky due to the chipotle pepper.  We garnished with low fat sour cream, raw onion, and avocado.  Those toppings are not included in the nutritional value at the bottom of the post.  This recipe serves 6 to 8


  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped
  • 1 large carrot, chopped
  • 1 stalk celery, chopped
  • 1 medium green bell pepper, cored, seeded and chopped
  • 1 medium red bell pepper, cored, seeded and chopped
  • 3 cloves garlic, finely chopped
  • 3 tablespoons finely chopped chipotles in adobo
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • dash of cayenne pepper
  • 1 1/2 teaspoons salt
  • 1 (28-ounce) can diced tomatoes, with their liquid
  • 4 cups water
  • 3 cups cooked red kidney beans, drained
  • 1 1/2 cups cooked black beans, drained

Method (I make a crock pot version)

Heat the oil in a crock pot liner on stove top over med to high heat. Add onions, carrots, celery, peppers and garlic and cook for 7 to 8 minutes, until vegetables are softened but not browned.

Add chipotles, oregano, cumin, chili powder and salt. Stir to blend. Add tomatoes and 4 cups water.

Set crock pot to high for 3-4 hours, after one hour add beans.  I have also done this where I add the beans with the tomatoes and water and cook for 8 hours on low while I am at work, it just makes everything softer.


Per serving (about 17oz/495g-wt.): 230 calories (44 from fat), 4.8 g total fat, 0.5 g saturated fat, 0 mg cholesterol, 1200 mg sodium, 37g total carbohydrate (13g dietary fiber, 9g sugar), 11 g protein
